Oatmeal Raisin Cookies

A Yummy AND Healthy Treat

Prep time: 10 minutes
Cooking time: 10-12 minutes
Yield: 4 dozen

Ingredients:

        • 1 tsp. baking soda
        • 2 eggs
        • 1 tsp. vanilla
        • 1 tsp. cinnamon
        • Apx. ¼ cup of water
        • ½ tsp. sea salt, fine
        • 1 cup raisins
        • ½ cup oat flour
        • 1 cup unbleached all purpose flour
        • 3 cups natural, old fashioned rolled oats
        • ½ cup chopped walnuts (Optional)
        • ¼ lb. (1 stick) butter, can also use softened coconut oil
        • 1 cup firmly packed, organic or natural brown sugar
        • ½ cup organic cane sugar

Directions:

  1. Heat oven to 350˚F
  2. Beat together butter and sugars until creamy
  3. Add eggs and vanilla, beat well
  4. Soak Ch-Ch-Ch-Chia® Chia Seeds in water for five minutes
  5. Combine dry ingredients and soak Chia Seeds, mix well
  6. Stir in oats and raisins, mix well
  7. Drop by rounded tablespoonfuls onto ungreased cookie sheet
  8. Bake 10-12 minutes and let cool before serving
